Grilled Cheese & Soup

What is it about a soup paired with warm toasted edges of fresh baguette?

It is these odd Florida weather days that you appreciate a taste of something hot. You spend the better half of your morning under sun and steamy heat. By the time afternoon rolls in the shadows of gray clouds and the drizzle mixes with ocean air a chill rolls in. The best thing is a light blanket covering your toes and a small cup of, in my case, Autumn Squash Soup.

There is no magic to a good grilled cheese. Just like eggs, if you can cook an egg then you are, in essence a good chef. I believe the true test is if someone were to present you a good grilled cheese. The perfect low heat, buttered bread matched to it’s ratio of cheese.
